As someone who thinks about food 24/7, appreciates the nutritional aspects of cottage cheese, and quite frankly has never been able to bring herself to try it by itself (shudder), I decided to get down to business figuring out ways to use it in recipes where I could reap its calcium- and protein-rich benefits without seeing it or tasting it - at all.

What Type of Cottage Cheese to Buy
Because all of these are blended cottage cheese recipes, large or small curd size doesn't matter. You will likely see 2-4% milk fat options at the store, as well as fat-free. I don't personally go for fat-free as I find a little bit of fat is often welcome for taste purposes, but go with either 2-4%. One drawback of cottage cheese is that it can have higher levels of sodium, but they sell lower- or no-sodium varieties if needed, too.
