    Creamy Avocado Apple Cider Vinegar Salad Dressing

    This avocado apple cider vinegar salad dressing is equal parts creamy and tangy, and will be a new favorite salad dressing added to your rotation. Kitchen staples (along with an avocado) are whisked together to make an easy and flavorful homemade salad dressing.

    I am a sufferer of analysis paralysis on many occasions, but it happens with nearly all small things. For example, I need to buy a new bathroom scale because our current one delivers a ten pound differential if you move it just a few inches left or right, all on the same tile floor. I choose to go by the lower of the two numbers (because, duh) but still. Want a new scale, need a new scale, but can't possibly decide which one to buy...so I do nothing.

    Same goes for where I get my hair cut. I want to try somewhere new but I can't choose where, so I've decided to embrace very long hair for the time being (and curse every morning when it takes me a million hours to tame it into a socially-acceptable mane). Typically I'm extremely indecisive when faced with a restaurant menu, but when I glimpsed the salad list at a local spot recently, I saw the words "apple cider vinaigrette" and was sold, immediately. THAT was my lunch pick, no second-guessing or last minute changes. I love apple cider vinegar. Done done done.

    When our meal arrived, the dressing was less of the traditional vinaigrette I was expecting and more of a creamy apple cider vinegar salad dressing, but there was no denying that apple cider vinegar was a main ingredient. I loved it! I tried to commit as many flavors to memory as I could so I could recreate it at home, which was slightly tricky given that "apple cider vinaigrette" was all I could glean from the menu. Also it was green, so there's that. Not a ton of info.

    Given all of the above, I probably took a few liberties here and there with this version, but it tasted very close to the restaurant version I fell in love with. The creaminess comes in part from mayonnaise, but also from ripe avocado that has been mashed and whisked into the dressing until smooth (or as smooth as you can get it). Apple cider vinegar is a no-brainer here, as is some olive oil for extra smoothness. I added a few dried herbs/spices (garlic, mustard, basil, and thyme) and thought they rounded out the flavor just right.

    Ingredients

    • ΒΌ cup mayonnaise (lite or regular)
    • Β½ ripe avocado
    • 1 tablespoon apple cider vinegar
    • 2 teaspoon olive oil
    • β…› teaspoon garlic powder
    • β…› teaspoon ground mustard
    • β…› teaspoon dried basil
    • ΒΌ teaspoon dried thyme

    • Add all ingredients to a bowl and whisk until creamy and smooth.

    Notes

    You can certainly play around with the spices and ingredients above to fit your tastes! This recipe can easily be doubled.

      I need a new scale too! I have that FitBit fancy one, but it's never charged, and it's so touchy. I just want a basic one. Mostly so I can see how much Josh weighs now. You wouldn't believe how often people ask how much your baby weighs! These dressing sounds mmm mmm good!

        Yes! A basic one is what we need. Tug went to the vet and we got his weight there, and then weighed him at home and was pretty different. Then we experimented with scale placement around the bathroom and it was crazy how different it was! Right now I'm operating on the "if my pants still fit, I'm alright" mentality haha. Thanks Nat!

      Apple cider vinegar is one of my favorite flavors of vinegar....it's so tangy and you really get that apple flavor! This dressing looks beyond delicious -- definitely good enough to eat with a spoon!

        Haha I know!! I was tipped off when our dog went to the vet and weighed differently than he does at home. Then I figured something was off and moved the scale around the floor and saw all the differences. Basically it's useless, because who knows what's right?! Thanks Ashley!

      My mom and I recently become obsessed with ACV! Haha! I've been using it for baking (i.e. vegan buttermilk) but she loves it on fries!

        Oh I looooove apple cider vinegar Rebecca! Definitely vinegar on fries! For awhile I diluted it with a glass of water and drank it, but stopped for whatever reason. I also used it as a facial toner at night for a little while but couldn't shake the feeling like I smelled like a salad! Nevertheless I love finding more ways to use it!
