This chipotle aioli is just the sauce to jazz up sandwiches and burgers, dip vegetables or fries, and more. Made with a shortcut with mayonnaise as a base, it's easy to adjust the spice level to your liking.
1Tablespoonadobo sauce from the can of chipotle peppers
1teaspoonlime juice
¼teaspoonmustard powder
⅛teaspoonpaprika
Salt and pepperto taste
Instructions
Add all ingredients to a bowl and whisk well to combine.
Adjust seasonings to taste. Store aioli in the refrigerator in a covered jar or bowl.

Ingredient NotesMayonnaise: Lite or regular mayo works just fine here.Chipotle peppers in adobo: This will be found in the "international" aisle of grocery stores. Using one pepper and one Tablespoon of the adobo sauce brings a low-moderate level of spice, but one that doesn't rise to higher levels as you keep eating it. If you're not sure how much spice you'd like, start with one or two teaspoons of the adobo sauce, take a taste, then add more if necessary.
Dice the pepper finely so that the spiciness gets dispersed the best it can. And do be careful when dicing as it'll be slippery.
