Enjoy the refreshing, minty citrusy effervescence of a cocktail classic without the alcohol in this mojito mocktail recipe. This simple virgin mojito features the right balance of flavors and is just sweet enough!
Prepare simple syrup if necessary (see steps in recipe notes section) and let cool.
Add simple syrup to the bottom of a tall glass, then add mint leaves.
Muddle the mint leaves with a muddler or handle of a wooden spoon, pressing down on the leaves several times to release their oils, very lightly twisting the muddler side to side until fragrant. Go easy so as not to rip/crush the leaves as this can turn the mint bitter.
Once muddled, add the lime juice to the glass and stir.
Add crushed iced to the glass, then top with club soda. Stir and adjust the ingredients to taste (more lime juice, club soda, etc.) Garnish with fresh mint or lime wedges or rounds.

Ingredient NotesSimple syrup: To make this, add equal parts water and granulated sugar to a small saucepan set on the stove over medium-low heat. Whisk/stir as the sugar dissolves. Once the sugar has dissolved fully, let the syrup cool before storing in an air-tight jar in the refrigerator. It can stay in the fridge for several weeks.Club soda/water: For a coconut non-alcoholic mojito flavor on the subtler side, I *highly* recommend replacing the club soda with coconut-flavored sparkling water. I've used the one from the LaCroix brand and loved the extra tropical flavor it provided in a better-for-you way without having to go the distance and add cream of coconut.
