In a medium saucepan set over low-medium heat, add 1 tablespoon butter, 2 teaspoon brown sugar, cinnamon, and nutmeg. Stir so that all ingredients are combined and butter melts. Add apple chunks and stir to coat apple pieces evenly. Let apples cook for 5-10 minutes, or until they have softened and coating is warm and gooey. Remove pan from heat while you prepare the blondie batter.
Preheat oven to 350°F. Grease a 9" x 9" pan and set aside. Melt butter and add to a medium-sized bowl. Add brown sugar and beat until mixture is smooth and lump-free. Add egg, vanilla extract, and maple extract and again beat until all ingredients are well-combined.
Add salt and flour and mix until the flour is just mixed in, taking care not to overmix. Stir in apple chunks and ½ cup of the caramel chips.
Pour batter into the greased pan and press additional caramel chips into the top surface if you'd like. Bake for 25-28 minutes, or until blondies are set and the top layer has solidified. Let blondies cool in pan and serve warm. Store in the refrigerator and reheat before serving.

*If you don't have maple extract, you can use an additional ½ teaspoon of vanilla extract in its place.Blondie are best eaten while still warm from the oven, or if warmed slightly in the oven/microwave after being stored in the refrigerator.
