Garlic Chipotle Mashed Potatoes with Cheddar
Easy garlic chipotle mashed potatoes with cheddar make a smoky and boldly flavored side dish to liven up any dinner. A few simple ingredients transform your favorite mashed potatoes recipe into something special!

- 3 lbs russet potatoes, peeled and cut into 1" cubes
- 3 tbsp unsalted butter
- 1/2 cup milk (I used 2%)
- 1/2 cup sour cream
- 5 cloves garlic, minced
- 1 1/4 tsp ground chipotle chile pepper
- 1 tsp salt
- 3/4 tsp ground black pepper
- 2 cups shredded cheddar cheese, your preferred variety
Peel and cube potatoes and add them to a pot of salted boiling water. Boil for 20-25 minutes, or until the potatoes are fork-tender and easily 'mashable' with a fork.
Drain water and add the potatoes back to the pot. Mash potatoes.
Add butter, milk, sour cream, and garlic and stir until the butter melts and everything is combined.
Add chipotle chile pepper, salt, and pepper and stir to combine.
Add shredded cheese and stir until melted and smooth. Take a taste and add additional seasonings or cheese to your liking.
I suggest serving these garlic chipotle mashed potatoes with cheddar fairly soon after they're done cooking as the cheese mixed in causes the mashed potatoes to set up some as they cool to room temperature. If you're not ready to eat just yet, set the pot over low heat to keep it warm, stirring frequently.
