You know those times when you want something so badly, it almost becomes a need? After a long week, this want/need oftentimes manifests itself as my trusty pair of sweatpants, a glass of wine (or beer, I’m an equal opportunist) and an episode or five of Parks and Rec.
This past weekend, I “needed” all of the above, with the addition of some comfort food. Real bad.
In all honesty, I was debating whether or not to post this one. You certainly don’t need to follow a recipe to make a grilled cheese. I don’t think I ever have. But the combination of flavors going on here is just too good not to
shout from the rooftops share. I mean, you could be less than twenty minutes away from melted pepper jack and buffalo chicken goodness. That information needs to be broadcast to the masses. 🙂
Basically, this is the sandwich of my dreams. Shredded chicken is mixed with a bit of sour cream, a healthy pour of Frank’s Red Hot Wings sauce (♥), and a few spices and piled high between two slices of pepper jack cheese (and two slices of bread). I like to use a pat of butter to cook my grilled cheeses, as I’ve found it crisps up the bread juuust the right amount.
There’s a little wiggle room with this recipe, as I used multi-grain bread and low-fat sour cream. As always, use your favorite bread and whatever kind of sour cream you prefer. One-and-a-half to two tablespoons of wing sauce did the trick for me to make this buffalo chicken grilled cheese the perfect level of, uhhh…buffaloness (??). If you’re a big fan of spicy foods, feel free to add more (or decrease the quantity if you’re into a more mild flavor).
If the rotisserie chicken industry needs a spokewoman…CALL ME! I can’t stop singing the rotisserie chicken praises. They’re one of my favorite things to pick up when I’m in a time crunch, such as after work when I’m hangry. You can break it down and enjoy shredded chicken for days, which means your lunches for the next few days are already figured out, too. Efficient, cost-effective, and healthy = it’s a winner!
The recipe below is more for the ingredients than the steps, so I’ll summarize the steps here: after you mix up the buffalo chicken, just do your grilled cheese thing. A buffalo chicken grilled cheese is in your future!
- 1/2 cup shredded, cooked chicken
- 1 - 2 tbsp sour cream, starting with one
- 1 1/2 -2 tbsp Frank's Red Hot Buffalo Wings sauce, to taste
- 1/4 tsp garlic powder
- 1/4 tsp dried basil
- 2 slices bread
- 1-2 slices pepper jack cheese, or your preferred cheese
- In a bowl, stir together chicken, sour cream, wing sauce, garlic powder, and basil until all ingredients are combined.
- On one slice of bread, layer one slice of pepper jack cheese, the buffalo chicken mixture, the other slice of pepper jack, and top with the last slice of bread.
- Place sandwich in a greased pan (I like to use butter) on stove top over medium-low heat. Flip when each side reaches your desired doneness.

I wrote how I took a step back and realized in the scheme of things, stressing out about comfort food that was supposed to make you destress was all kinds of silly.
